Zincacantan was founded in 2012 by mezcalera Fabiola Torres Monfil and co-founder Diana Pinzon. The fabrica de mezcal is based in the hills of San Diego de la Mesa Tochimiltzingo, an hour outside of the center of Puebla. Fabiola, a fifth generation mezcal producer, comes from a family that has been making mezcal for over three hundred years. The brand Zinacantan, is a Nahuatl word that means 'land of bats' and nods to the focus on sustainability throughout the process of mezcal production from quantity to process to waste and the impact it leaves behind.
